Today was very successful! It is cupcake baking day. I swear it feels like the days are further and further apart from Wednesdays. I just really look forward to baking cupcakes! I got another recipe off of
How To Eat A Cupcake who got it from Cupcakes Galore. I really need to get some cupcake books of my own dang it! I have a whole list of stuff I want for Christmas this year!
These weren't like the usual throw all the ingredients in and all that. I was a little unsure if I was doing it right but the cupcakes came out beautiful right from the oven. Just look at them:
I decided to try out the Swiss Meringue Buttercream frosting once more. You know what they say - third time is a charm! Indeed it was! My third time trying it was a success! I was so happy to see it turning! It actually did the curdled look but I was still skeptical that it wasn't going to work out and I would have to stick to regular buttcream. It did it though..it turned into beautiful frosting and I was so happy. Although the whole time it started looking like frosting I kept thinking that it was going to fool me and then go oily or runny. I definitely think that last time it was because I didn't use real butter. Real butter is where it's at! If it says butter, I'm using butter!
So, I made about 18 cupcakes with the recipe on HTEAC and loved it. They were so delicious. When I gave my mom one I thought I was going to have to leave the room she was enjoying it so much. Everyone really enjoyed these cupcakes and the frosting.
Hmm, what cupcakes will be made next week?
